Swiss Buttercream for Flowers Tips | Flowers Cupcakes



With the unveiling of the Valentine's Collection, I shared the flower adorned chocolate heart cake (below).  As promised, here is a post devoted to the Swiss Buttercream I used.  

We used the same tips and the same buttercream to make these Peony inspired Cupcakes, too.




I used these new Flowers Tips to create the flowers.  Just one little squeeze creates an entire flower - amazing.  They were so easy to use, almost magical.  Emma and I had so much fun with them.  We created the cake and cupcakes.

I used these flowers as color inspiration, but they also remind me of Peonies - especially the tip with the dots in the middle!  I love the soft peachy, pink tone.  Also, I love the muted olive green of the bay leaf I used.  You could also make a deep navy blue to mimic the privet berries, but we used the real ones to garnish.  Actual blueberries would look darling, too.


 These cupcakes were made entirely by Emma!


Swiss Buttercream Recipe

4 egg whites
1 cup of sugar
1 teaspoon of vanilla
4 sticks of butter, room temp
1 cup of powdered sugar
food coloring

Create a double boiler by placing a glass bowl over a pan of simmering water.  Add sugar and egg whites.  Whisk constantly over the simmering water until the sugar has melted.  It will feel smooth between fingers, when sugar granules have dissolved.

Pour egg white mixture in a mixer fitted with a whisk attachment.  Whisk on high for 5-8 minutes until it creates a glossy meringue and has cooled completely.  Add butter 1 tablespoon at a time.  Slowly mix in powdered sugar until smooth.  Add vanilla and food coloring.

The butter transforms the meringue into swiss buttercream.  


To color the butter cream, I started with these flowers for inspiration.

1) I started with a small bowl of about 1/4 of the butter cream.

2) I added a touch of red and a half touch of yellow to make the pinkish peach.  This is the darkest pink.

3) In another bowl, I put 1/3 of the buttercream and added a little of the pink mixture - this created the palest pink.  Now, you can add more white to the deepest pink if you'd like to lighten it up.

4) For the green, I used a lot more yellow than blue to make it the deep olive tone.  You'll need a lot of food coloring to get this deep of a color.




For the cake, we piped our flowers onto a parchment lined baking sheet, then put them in the fridge to chill.  It only takes 10 minutes or so.  Then we transferred them onto the cake.  For the cupcakes, we piped right on them - but this is a little riskier, as they don't all turn out perfectly.

Valentine's Day Flowers | DIY | DIY Valentine's Day Flowers




I like a nice store-bought gift, but I LOVE a homemade gift.  I also LOVE to make homemade gifts.  Valentine's Day is one of those holidays that the thought really does count.  The holiday is right after The Holidays and I still haven't come down from our over-indulgent Christmas season.  I am in the mood for simple and sweet.  These two projects are beautiful and inexpensive.  I think anyone would be thrilled to receive either one... or both.  Me?  I would like both.



Burlap wrapped tulip bouquet with homemade Valentine's Day label.

 You'll Need :

1 bouquet of 6-12 tulips ($6 at the store)
1 square foot piece of burlap
1 yard of satin ribbon (paper-source)
1 valentine's day label/card
1 piece of double stick tape (or zot)

TIP : When you pick up your bouquet at the grocery store florist, ask them for some water tubes.  It will help to keep the bouquet fresh.  It is not absolutely necessary, but it will help if they will be out of water for more than an hour.

Valentine's Day Cupcakes | Cupcake Boxes | Cupcake Packaging


Valentine's Day Cupcakes & Cupcake Boxes



Yes, boxes of candies are nice. I think I'd rather receive this beautiful box of cupcakes for Valentine's Day.  Both simple and special - this is a great gift for friends, coworkers or that certain someone.  If you like the Valentine's Day card/label, you can download and print the template here!

Buttercream Frosting :

4 sticks of butter, softened
6 cups of confectioners sugar

In the kitchen aid fitted with the paddle attachment, whip the butter and sugar together for 5 minutes until it has transformed into a white fluffy frosting.

To color a soft pink, add 3 drops of red food coloring, 1/2 drop of orange, and a 1/2 drop of green.  Add more red for a brighter color.  The orange and green help to soften the bright pink, creating a more sophisticated color.  For more icing tips, watch my cupcake decorating video

 Cupcake Box Directions :

1) With a piece of parchment paper or tissue, create a scallop along the edge by tracing around half of a small juice glass, and repeating along the paper.
 2) Fold the paper in half and trim it down on the sides to fit the box.  Cut along the scallop lines.
 3) Unfold the tissue/parchment inside the box. 
 4) To make the label, print out my valentines day templates.  You can download them here.
 5) Trim the label down to size.  I like to use this paper cutter for really straight lines, but scissors work great, too. 
 6)  Use double-stick tape or these Zots to mount the label on the inside of the box.
7) Insert cupcakes.

TIP: Before I put the cupcakes in the box, I like to refrigerate them for an hour.  The chilling makes the icing hard so it won't be damaged when you put it into the box.  Then store them in the refrigerator until you give them away... or eat them.
