Happy Halloween from Princess Emma | Cranberry Orange Scones | Jack-O-Lantern Quesadillas


Happy Halloween from Princess Emma and her Puppy!  This is Emma at school this morning with her friend... and future prom date?  I have more princess photos below, but first I thought I'd share some photos of Emma and I making our favorite scones in our pajamas.
 

 Emma's all decked out in her Jack-O-Lantern PJ's for a little morning baking.  We love making scones in the morning - they really only take 5 minutes to put together and bake for 15.  Much easier than cinnamon rolls... and soooo good.

I'm so glad it is finally cranberry season.  We've been using fresh cranberries instead of dried in our Orange-Cranberry Scones.  It is just how they were made in Concord, Ma. at Verrill Farm... where this obsession all started.


What was that Emma?  You'd like 1 cupcake, please?



Here they are out of the oven with orange glaze.   This recipe was inspired by the Barefoot Contessa's scones - but with the addition of fresh cranberries.

Cranberry Scones
with an orange glaze
makes 6-8

2 cups plus 1/4 cup all-purpose flour
1/3 cup sugar
1 tablespoon baking powder
1/2 teaspoon sea salt
12 tablespoons cold unsalted butter, diced
2 extra-large eggs, lightly beaten
1/2 cup cold heavy cream
1 cup fresh cranberries
....
1/2 cup confectioners' sugar
4 teaspoons freshly squeezed orange juice

In a mixer, combine flour, sugar, baking powder and salt using the paddle attachment.  Cut the cold butter into 1/2 inch pieces.  Add the butter to the dry ingredients and mix on low until the butter is mixed in and is the size of peas.  In a separate bowl, mix together eggs and whipping cream with a fork.  Turn the mixer on low and slowly add the cream and egg mixture.  Turn off the mixer once added.  Fold in cranberries. 

Put some flour on the counter.  Turn the dough out onto the floured surface.  Add some flour onto the top of the dough, then pat it out into a disk - about 8-9 inches in diameter.  Cut the disk into 6-8 pieces like a pie. 

Separate the pieces and put them on a silpat or parchment lined baking sheet.  Bake at 400 degrees for 15-17 minutes.

To make the glaze, stir together orange juice, zest and powdered sugar. 


We also made these Jack-O-Lantern quesadillas for her school party.  I found the idea on pinterest - perfect for toddlers.

  10. I made these scones today and they are SO tasty. My husband asked "How many can I eat? All of them?" I might just make them every week as long as I can get fresh cranberries!
