Coconut Cupcakes

 Coconut Cupcakes

1 white cake mix
1 stick of butter, melted
1 cup of milk
3 eggs
1 tablespoon of vanilla bean paste
1/2 teaspoon salt 
14 ounces of sweetened shredded coconut
2 sticks of butter, softened
4 ounces of cream cheese, softened
4 cups of powdered sugar

In a mixer fitted with a paddle, combine cake mix, butter, milk, eggs, vanilla and salt.  Beat on medium for 3 minutes.  Stir in half of the coconut.  Divide batter into a muffin tin lined with cupcake papers.  Bake as directed on the box.  Cool.

For the frosting, beat together butter and cream cheese in a mixer.  Add powdered sugar a little bit at a time.  Add a tablespoon of milk at a time until it is a nice consistency.  Frost cupcakes.  Top with remaining coconut.
