Recipes | Grilled Tuscan Chicken with Panzenella & Risotto

I love when my shopping cart looks like this - all fresh, seasonal ingredients... tomatoes, peppers, green onions, garlic, avocado, lemons, parsley, cucumber, thyme, basil... yum.


Grilled Tuscan Lemon Garlic Chicken

2 chicken breasts
1/4 cup of olive oil
6 cloves of garlic, minced
2 lemons, juiced (1/4 cup)
salt & pepper

Combine the above ingredients and marinate the chicken for at least 2 hours. Remove from the marinade and grill on each side for 5-8 minutes. Put the marinade in saucepan and bring it to a boil - reduce for 5 minutes to create a sauce.
